Whenever I go down to visit fam in VA, I stay with my homey and his brother. They’re family, too. Last visit, I found the spare key and let myself in but I was ravenous. There was a Tupperware full of cookies which is rare for two guys who don’t really dig sweets, plus Jake is uber-allergic to dairy. Um…these cookies were ridiculous. I am a Cookie Monster. When I first moved to NYC, I made it my personal mission to find the city’s best chocolate chip cookie. I have been nibbling my way through every fresh-baked version I could get my paws on. So, needless to say, I take chocolate chip cookies pretty seriously.
As soon as Jake got home, I asked, “What the hell are these angelic things???” He said his girlfriend made them for him, dairy & gluten free. What?! Usually vegan baked goods taste like a forest floor. Gross. But these…oh man. I did us all a huge favor and got the secret recipe out of her. Banana Chocolate Chip Cookies. You can’t tell these are free of anything. Thanks Ann Marie!
Yummy Banana Chocolate Chip Cookies
- 12 Tbsp Earth Balance Vegan Buttery Sticks
- 1 c brown sugar, firmly packed
- 1/4 c white sugar
- 6 Tbsp mashed bananas
- 2 tsp vanilla
- 2 1/4 c all purpose gluten free flour blend
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 c gluten free chocolate chips, such as Enjoy Life brand
Heat oven to 375 degrees. In mixing bowl, cream together Earth Balance and sugar. Add bananas; then add vanilla. In medium bowl, sift together gf flour, baking soda, baking powder, and salt. Slowly add flour mixture in to “butter” mixture and mix until just combined. Fold in chocolate chips by hand. Drop by heaping teaspoon onto ungreased cookie sheet. Bake for 8-10 minutes or until light golden brown. Then let cookies cool on sheet for 5 minutes before moving to cooking rack.
