Valentine’s Day is next week. Hold on, I’m checking when…Next Sunday. For all you ladies out there who care about this holiday, I’m sorry. I know part of you doesn’t want to care, that you’d rather your man (or woman) show you love every day, regardless of the date. Sometimes things like this need to be scheduled, unfortunately. So, don’t feel guilty for wanting a box of chocolates or a bouquet of flowers. Just learn how to make this sexy dark chocolate sauce and put it on ANYTHING. It will make them love you even more.
SKIM’S SEXY DARKNESS
- 1 1/2 c heavy cream
- 2/3 c firmly packed dark brown sugar
- 4 oz. fine-quality bittersweet chocolate, chopped
- 3 oz. unsweetened chocolate, chopped
- 1/2 stick (1/4 cup) unsalted butter, softened
- 3 to 4 tablespoons Amaretto, or to taste
First note, you don’t have to use Amaretto (almond). You can use Kahlua (coffee), Grand Marnier (orange), Frangelico (hazelnut), Chambord (blackberry), etc. The list goes on. Use whatever you and your sig oth like. In a small heavy saucepan combine the cream and the brown sugar. Bring the mixture to a boil over medium high heat, whisking occasionally, until the brown sugar is dissolved. Remove the pan from the heat and add the chocolate, whisking until it melts. Whisk in the butter and liquer until the sauce is smooth. Let the sauce cool slightly before serving. This sauce can be made 1 week in advance, covered & chilled. Reheat the chocolate sauce over very low heat, stirring occasionally, until it’s warm. Serve over ice cream, profiteroles; dip strawberries, bananas, pound cake, angel food cake, brownies…you get the picture. Happy Valentine’s Day. Be your own cupids.
